These are sticky, chewy and unbelievably delicious, as well as being completely whole food, plant based and good for you.
My pet peeve is when recipes have a whole essay on the blogger's life story that led to the discovery of their recipe you have to scroll through to get to the instructions... so let's get into it!
Ingredients:
150g dried figs, soaked in boiling water for 10 minutes to soften
2 cups oats, blended into oat flour
4 tbsp smooth peanut or almond butter (tahini would also work)
2 tbsp agave nectar (any liquid sweetener)
1 tsp vanilla essence
3 tbsp dark chocolate chips (you could use cacao nibs or raisins to bring down the sweetness)
1/2 cup almond milk
Method:
Blend the figs to create a paste.
Mix all the ingredients to create a sticky dough.
Press into a lined, shallow tin
Bake on 150 degrees Centigrade for 15-20 minutes, making sure they don't dry out. Allow to cool completely before cutting them up.
Enjoy as a healthy snack or breakfast on the go!
